4 grocery bags of fresh poke sallet leaves
about 3-4 TBSP bacon grease
6-8 eggs
Using your fingers, carefully pick the red skin off. Wash it thoroughly - wash until water comes clean, usually 2-3 times.Â
Bring 2 large pots of water to a boil. Add all of the leaves to one pot to boil for about 30-40 mins. (tip: use 2 pots to take mess from one pot to the other so as not to shock with cold water.) Fish out the leaves & drain it well. Add to the second pot to boil again. Drain the leaves again. Put on a 3rd pot of hot water & add the leaves. When it comes to a good boil - fish it out & put it into a pan with hot bacon grease - fry until all moisture is out, while frying break 6-8 eggs in separate bowl (tip - break eggs individually in little bowl to check for cleanliness), beat eggs like scrambled, pour into pan with poke sallet, cook it quickly & ready to eat!
