Using your fingers, carefully pick the red skin off. Wash it thoroughly - wash until water comes clean, usually 2-3 times.
Bring 2 large pots of water to a boil. Add all of the leaves to one pot to boil for about 30-40 mins. (tip: use 2 pots to take mess from one pot to the other so as not to shock with cold water.) Fish out the leaves & drain it well. Add to the second pot to boil again. Drain the leaves again. Put on a 3rd pot of hot water & add the leaves. When it comes to a good boil - fish it out and use it in your recipe.Â
